Food duty is a hygiene problem before it is a handling problem. The machine has to be washed down, and anything that traps water will eventually be the reason a line fails an audit. So the frames are open, the surfaces slope to drain, box sections are avoided or sealed, and fasteners are stainless throughout. SS 304 covers general food contact; SS 316 is used where there is salt, acid or aggressive cleaning chemistry. Where floor space is short, a spiral buys the height that a straight incline cannot.
